Fruit sando traces its roots back to Japan’s early fruit parlours and cafés. Fruits were once considered a luxury item and were often gifted during special occasions.
Over time, fruit shops began opening cafés alongside their stores, serving fruit-based desserts that made premium fruits more accessible to the public.
Eventually, fruit sandwiches became a popular café treat in cities like Tokyo and Kyoto.
Over the years, the dessert evolved from simple fruit-filled sandwiches into beautifully styled creations designed to look visually striking when sliced.
What exactly is a fruit sando?
At its core, a fruit sando is a sandwich filled with fresh fruits and whipped cream placed between slices of Japanese milk bread, also known as shokupan.
The soft and fluffy bread pairs perfectly with colourful fruits like strawberries, mangoes, kiwis, oranges and blueberries.
Light whipped cream ties everything together, creating a dessert that feels refreshing, airy and perfect for summer.
Today, fruit sandos are commonly found in Japanese fruit cafés, department store food halls and convenience stores such as 7-eleven.
Several videos of tourists trying out these sandos during their Japan trip have inundated social media. Several companies across the world were to quick to the adapt to the trend.
For instance, last year, Marks & Spencer launched a limited-edition strawberries and cream sandwich in the UK, featuring fresh strawberries, whipped cream cheese and sweetened bread. According to the BBC, the product was inspired by the viral Japanese fruit sando trend.
The trend reaches India
The fruit sando trend has now made its way into India’s café culture as well. Over the past few years, more cafés and bakeries have started experimenting with the dessert, while chefs and food influencers continue to share viral versions online.
Originally popular in Tokyo cafés and convenience stores, the dessert has now become a summer favourite in Delhi as well. The Wongdhen Cafe situated in Majnu ka Tila is serving a seasonal mango fruit sando made with Japanese milk bread, fresh mangoes, and lightly whipped cream.
Another example of the dessert’s growing popularity is Eat.Sando, a venture started by two college students in Kochi. What began as a small pop-up quickly went viral online, selling out on its very first day, as reported by The New Indian Express.
Speaking to Hindustan Times, Agam from EggCult explained why the dessert resonates so strongly with Indian audiences.
“...what surprised us is how much it connects to Indian memory. Cream and fruit on soft bread is basically the fruit cake everyone grew up eating at birthday parties. So even though the format is Japanese, the feeling is very desi.”
Perfect summer dessert to recreate at home
Despite its elegant appearance, fruit sando is surprisingly easy to make at home. Food blogger and cookbook author Shivesh Bhatia shared his own mango fruit sando recipe which has taken over social media.
Ingredients
- 4 bread slices
- 1 mango
- 1/2 cup whipping cream
Method
- Beat the whipping cream using an electric whisk until stiff peaks form.
- Place one slice of bread on cling wrap and spread a generous layer of whipped cream over it. Add half of a cut mango on top, then pipe more whipped cream over the mango.
- Place another slice of bread on top and remove the excess cream from the sides using an offset spatula.
- Wrap the sandwich tightly using the cling wrap and chill before serving
