Double strain into the prepared coupe glass and garnish the cocktail with a dehydrated lime wedge.

Fill a rocks glass with fresh ice to chill. In a shaker, add vodka, green apple syrup, lime juice, and 6 mint leaves. Shake vigorously until well chilled and aromatic. Double strain the mixture and garnish with a slice of green apple, a sprig of mint, and a slice of jamun. Lightly press or slap the mint sprig before garnishing to release more fragrant oils.

Fill a rocks glass with fresh ice to chill In a shaker, place half green chilli and pour in tamarind masala-muddle gently, but avoid over-muddling to prevent excessive heat or bitterness. Pour in the vodka, lime juice, and ice. Shake it strong until the mixture is well chilled and the flavours are infused. Strain the cocktail to remove chilli bits and pulp. Garnish with a thin slice of green chilli and a dehydrated lime slice. For an extra smoky aroma, briefly torch the green chilli before garnishing.

In a shaker, add Smirnoff No. 21, raw grapefruit juice lime juice, elderflower syrup, and plenty of ice shake vigorously un l well chilled and mixed. Strain the mixture into the salt-rimmed rocks glass and add a splash of tonic water for a touch of effervescence, garnish with a fresh grapefruit wedge and a sprig of rosemary. Bonus points if you lightly torch the rosemary before serving as it instantly makes the drink feel bar-quality.
