In your lunchbox: zesty chicken and zucchini sandwich
Here's a healthy, light but satiating sandwich to begin your workday with.

[/caption]Ingredients:• 4-6 slices of whole wheat bread• 2 medium zucchini, sliced and grilled• 1 teaspoon grated lime zest• 2 teaspoons salt• 1 tbsp olive oil• 100g goat cheese• 2 boneless chicken breasts, pan fried and cut into chunksMethod: Preheat broiler. Arrange bread pieces cut side up on a baking sheet. Broil bread just until lightly toasted. Spread the goat cheese on the bread slices.In a bowl mix together the zucchini, lime zest and coarsely chopped basil and olive oil.Top bread slices with zucchini mixture and chicken. Sprinkle with salt and pepper. Cover with another slice of bread.
