In your lunchbox: tomato mozzarella and tapenade sandwich

That leftover black olive tapenade you made for dinner yesterday... it makes an excellent sandwich for breakfast, too.

With the olive tapenade from last night, you can put together a quick sandwich for lunch. Instead of making a sandwich by starting with the usual smear of butter on the bread slices, use the olive tapenade. Fill the sandwich with sliced plump red tomatoes, fresh mozzarella, and a few shreds of basil. They have such an amazing flavor and are a nice break from the traditional sandwich. Just please don't make this on a soft bread or they will be soggy and won't taste nearly as good!... If you are packing this sandwich for lunch or an outing, wait to spread on the tapenade until just before eating.
