How misal pav became Pune's most iconic dish
Long before food tourism and social media trends, Punekars were lining up for plates of misal pav, a dish that remains one of the city's most continous culinary symbols.

Few Indian cities are as closely linked to a single dish as Pune is to misal pav. The spicy Maharashtrian staple is available across the state, from Nashik to Kolhapur, but it is Pune that has become its unofficial capital.
The connection has been built over decades. Across the city, neighbourhood eateries have made misal a fixture of the morning meal. It is the sort of food that cuts across age and class: students eat it before lectures, office workers stop for a quick breakfast and families make weekend trips to long-established restaurants known for their particular recipe.
A typical plate combines sprouted moth beans cooked into a spicy curry with farsan, chopped onions, coriander and pav. The ingredients are simple, but the final result varies dramatically from one kitchen to another. Some versions lean heavily on chilli, others on tanginess. In Pune, these differences are discussed with the seriousness usually reserved for cricket or politics.
The debate over the perfect plate
The city's best-known misal establishments have spent decades building fiercely loyal followings. Certain names recur whenever the subject comes up, and every Punekar seems to have a preferred version. Recommendations are rarely neutral. They arrive with detailed explanations about spice levels, texture and the correct balance between the curry and its toppings.
That culture of comparison has helped elevate misal from everyday food to something closer to a civic obsession. Visitors arriving in Pune are often directed towards a misal restaurant before they are told where to find the city's museums or shopping districts.
Pune's version of the dish is also distinct from some of Maharashtra's other regional styles. While Kolhapuri misal is known for its fiery heat, Puneri variations often place greater emphasis on balance. The spice remains, but it is usually accompanied by savoury and tangy notes that make the dish easier to return to day after day rather than as a one-off challenge.
The city's growing reputation as a food destination has only strengthened misal pav's status. Travel guides routinely include it on lists of must-try local foods, while social media has introduced famous Pune eateries to diners from elsewhere in India.
Misal pav became synonymous with Pune because generations of residents made it part of daily life. The queues outside the city's best-known establishments existed long before anyone was posting photographs of breakfast online.
That longevity may explain why the association has endured. In a city that has expanded rapidly and changed beyond recognition in some neighbourhoods, misal pav remains one of the few traditions that has travelled intact from one generation to the next.
